Mousse like it should be…
Ok. So those of us located North of the 49th parallel just had our Thanksgiving weekend. Aaand I am pretty sure we needed at least a day before we wanted to think about more food.
SO. Now that you are hungry again, let’s start with dessert.
I think that we can all agree that the majority of people enjoy chocolate in one way or another. This isn’t completely a bad thing as the darker chocolates are known to a much healthier choice. It becomes troublesome once additional refinement and ingredients are added that chocolate goes from health food to dangerous.
So using one of my favourite foods – Avocados – and with the assistance of my nephews we set out to make Avocado Mousse that is friendly even to those with some milk allergies.
WARNING – Please pay attention to the ingredients listed here. My Nephew Viktor was our testing agent as he does have a milk allergy and did not have a reaction when consuming this. You may have a more severe version then he does. You should know yourself pretty good by now if you are reading this. ‘Juss sayin.
Starting with a recipe we found on the Food Network site, we modified the ingredients list to make it friendly for our dairy free brethren out here.
Here is what we used:
4 Ripe Avocados
1/2 cup Agave
1/2 cup unsweetened cocoa powder
1/2 cup Semi Sweet – dairy, nut and Soy free Chocolate Chips
1/3 cup almond milk
1 tablespoon of vanilla extract
1/4 teaspoon of salt
1 eager assistant.
Directions:
- So this is the easy part. We started by melting the chocolate chips. If you have never done this before, all you do is place a pot of water to boil on the stove. Place one bowl on top and place your chips in here. Make sure you keep an eye on things as you want to keep mixing as things melt. Once its all melted, turn off the stove and set this aside.
- After peeling and pitting the avocados, we place all this goodness in a food processor. We then added the cocoa powder, the almond milk, vanilla extract, salt and agave and started processing. As this was happening we then added the melted chips as well.
- Have your assistant push the pulse button as necessary
- Once you see that things are blending nicely, you can turn on the setting to keep the motor on until you get this smooth creamy texture.
- Place this concoction in the fridge for a minimum of 3hrs
- Enjoy the goodness!
So, this is where we should show you a completed picture of how it turned out when we served it. But it turns out my assistants enjoyed this more then I anticipated. This is what was left by the time my camera came out.
